Savory Fruity Salad!

For those of you living in the northeast, you know what I mean when I say warm weather can’t come soon enough.  Well, I have a fun recipe for you that is reminiscent of summer but also has some earthy flavors that remind you of winter!  Apologies for not having beautiful photos because yes, this salad was quite pretty and presentable, but I hope you’ll be able to use your imagination 😉

Makes 2 servings.

Ingredients:

  • 2 cups of arugula
  • 1/2 cup of blueberries
  • 1/4 cup of raw pecans (walnuts fine, too)
  • 1/2 endive, diced
  • 1/2 fennel bulb, sliced
  • 1 dinosaur plum (normal plums are okay)
  • 1 cooked beet
  • 1 soft-boiled egg
  • pecorino romano cheese, grated (optional how much you use!)
  • handful of pomegranate seeds (yum!)

 

Dressing:

  • 2 minced garlic cloves
  • 1/4 tsp of dijon mustard (Maille brand my favorite)
  • 1/2 cup of olive oil
  • 1/2 lemon (or equivalent in juice)
  • lemon zest (optional)
  • sliced basil (optional)
  • dried orgeano, thyme (optional)
  • a few raspberries, blended (optional)

Mix it all together in a presentable way.  For the dressing, you may use a processor to blend. I just whisked by hand since I didn’t use any raspberries.
