Cream of Asparagus Soup Recipe (2 servings)

1 bunch of asparagus, with tough ends removed, and sliced into thirds
1 cup of legal chicken stock
½ cup pecan milk
2 cloves of garlic
½ yellow onion
salt and pepper
1 tbsp of olive oil

Preheat oven to 375 degrees. Place asparagus, garlic, and onions, drizzled with oil, salt and pepper, into the oven for 20 minutes.  Remove onions before placing into the chicken stock.  Heat on medium heat until boils, then turn to simmer and cover for 10 minutes.  Add pecan milk and simmer for another 10 minutes.  Place soup and asparagus into blender and blend until smooth.
