Happy thanksgiving, all! I know those of you just starting out this diet, like me, are just having the hardest time with missing out on mashed potatoes and stuffing. Well, I can’t say this is going to make you feel better but it sure is tasty! A simple recipe for those rushing out to get around to see family for the holidays 🙂 3 breasts, sliced in 2 inch wide pieces. I prefer 100 percent pasture – fed chicken 6 rosemary leaf stems One mini red onion, cut into fourths 1/4 a butternut Squash, deseeded and diced 1 zucchini, deseeded and diced Spread out the squashes on the bottom of your pan. Preheat oven to 400 degrees F. Layer rosemary and onions around so that the flavor gets around. Place chicken on top. Ideally, you can handle salt and marinade 12-24 hours ahead of time. The juice of the chicken drips into the squash and tastes just divine! Remove rosemary and onion before eating 🙂 Makes 2-3 servings!
