So I’m still quite jetlagged and I wasn’t sure if I should eat breakfast or lunch at 3 in the afternoon, so I just ate both together! The following is my recipe for a super simple version of mashed cauliflower, an SCD substitute for mashed potatoes. Many similar recipes online are not as simple, so I bet mine is the most GI tract friendly. 🙂
1 medium head of cauliflower. Stem cut off, but keep about 1.5 inch pieces of florets.
1/2 teaspoon of ground black pepper (salt if your intestines can handle it!) Handful of Italian parsley leaves, chopped. I didn’t add these but something tells me that they would taste yummy together!
1.Steam your cauliflower for 15-20 minutes, depending on the strength of your steamer and your preference for how “mashed” you prefer your cauliflower.
2. Let cool before placing in your processor and just pulse at low with a sharp blade. If you are without a processor, just use a fork and a blunt, wooden spatula to mash!
3. Mix in parsley and salt and pepper. If your intestines can handle it, add melted butter and grated cheese or sour cream, and even roasted garlic would be a tasty addition! Happy cauliflower-ing!
